GAMBIAN HOME COOKING - PART 1

Whilst I was in the Gambia I was keen to learn more about the local cuisine, so I seized upon the chance of a cooking day with Ida Cham Njai, who runs cookery classes from her home in Brufut.  Yabouy Home Cooking aims to offer visitors a truly authentic experience from market to plate - starting off with donning traditional dress (any embarrassment factor is soon forgotten once you realise how comfortable you are).  Next stop - a trip to the market to buy ingredients for the day, whilst fervently hoping that the locals aren't sniggering too much.  Ida favours this market, she says, because she can buy from local women who bring goods from their gardens to sell. 

After bartering for an exciting array of fish, fruit and vegetables (including bitter tomatoes, cashew fruit, barracuda and scotch bonnets) we head back to Ida's house to make a start on lunch.  Recipe and further pictures to follow...
