LYNN-AMANDA'S FABULOUS COOKIES
This is my Mum's great cookie recipe, named (and invented) by herself, and she's right - they are fabulous. They are great because they look healthy, but actually aren't at all. As she says, this recipe will make about 48 cookies, but they won't last long! The measurements are in American cups, but if you don't have cups use a measuring jug - one cup equals up to the 250ml mark, half a cup is 125ml, and so forth.
Ingredients
1/2 cup butter
1/2 cup sunflower oil
1 cup light brown sugar
1/2 tsp vanilla extract
2 eggs
1 tsp instant coffee in 1/4 cup water
1 1/2 cups of spelt flour (or whatever flour you like)
1 tsp baking powder
3 cups porridge oats
1/2 cup each raisins, chocolate chips, sunflower seeds, sesame seeds, chopped nuts, or anything else you fancy
Method
Heat oven to 180oC (350oF) and oil some baking sheets. Beat the oil, butter and sugar together until creamy, then beat in the eggs, coffee and vanilla (it should emulsify, but don't worry if it curdles). Stir in the rest of the ingredients - it should be quite stiff.
Drop in tablespoons onto a baking sheet (about 12 per sheet) and flatten slightly with a fork . Bake in the oven for about 10-15 mins or until sufficiently browned for your tastes. Then scoff them!
