CAULIFLOWER CREATION
This is Bill's recipe for the ultimate cauliflower cheese - it is simply fantastic but also terribly rich, so it would be good served with something a bit more plain, maybe some green vegetables or rice.
Ingredients
one onion, chopped
one cauliflower, separated into florets
cheddar cheese (lots, grated)
grain mustard
butter
cider vinegar
double cream
dried tarragon
200ml vegetable stock
Method
Fry the onion in butter, add a splash of cider vinegar, and reduce until almost all the liquid has gone. Add the vegetable stock, half a carton of double cream, a teaspoon of dried tarragon, black pepper and salt and simmer until it reduces and thickens. While this is simmering, steam the cauliflower until tender. If it doesn't thicken very much you can add some cornflower until a creamy texture is reached. Add a large handful of grated cheddar and a tablespoon of grain mustard and pour over the steamed cauliflower, coat with another layer of cheese and pop into the oven or under the grill until browned and bubbling.
