APPLE MUSH
This is a favourite comfort food of mine – it’s great hot or cold, for pudding, for breakfast – you name it! I have a tendency to buy lots of apples and then not eat them; this is great for using up old apples that have gone a bit wrinkly.
Ingredients
Apples (however many you want, whatever kind)
Spices (again, these are optional)
Sugar (if you’re using cooking apples)
Method
Peel and core the apples and chop into small chunks. Place in a saucepan with a couple of tablespoons of water and cook gently with the lid on until soft. Once this has happened, taste the apples to check if they need sugar – they definitely will if you are using cooking apples, but eating apples are normally fine without it. If using spices, you can add them at any point – nutmeg, cinnamon, ginger and cloves are all good. Once the apples are soft, they will usually break down into mush, but if you prefer more of a puree, then stick them in the blender until smooth. Voila! Apple mush. You can also add more fruit if you have it – I did a batch of this with some elderly blueberries and it was great, not to mention a fantastic colour. I love this warm with yoghurt, but you can also use it as the filling for pies or crumbles, or just eat it cold on its own!
