CARROTS ARE COOL
Stuck in a salad rut? Why not try something different from the tired old lettuce / cucumber / tomato combo? I’ve been experimenting with carrot salads recently; my current favourite is grated carrot with chopped apple, walnuts, and sultanas. Dress with lemon juice, oil and a little salt – it’s a quick and easy way to pep up your plate.
